We are in love with Welsh Corgis. We presently own 2. Edward is our baby and Gemima(Gem) is our watchful big sister. They are truly intelligent and loyal, they accompany us to the lake cabin and camping here in MN. They love boating and are all around our special companions. We can't imagine life without them.

She knows what to do when Edward misbehaves and is a good helper. She loves the lake and doing jobs around the house like helping to garden and watch Edward.

Lizzie is almost 6 month (18th of this month) old. She is tri-color. Lizzie is very friendly and desperate to make new friends (human and dogs). My wife and I live near downtown (SW). Which dog park you want to meet?
Anise Christmas Cookies
1 cup unsalted butter
1 pint light molasses
1 cup water
1 cup granulated sugar
1 teaspoon salt
1 Tablespoon anise seed
1 Tablespoon coriander seed
1 Tablespoon fennel seed
1 teaspoon clove, ground
1 teaspoon cinnamon, ground
1 Tablespoon Baking Soda
All purpose flour to dough consistency
Put all of the above into a large non-reactive pot (No aluminum) and bring to a boil over medium flame. Add to this the 1 Tablespoon of baking soda (be aware that this will foam up so be sure you use a pot with sufficient room). When the baking soda reaction subsides, add enough all purpose flour (there is no measured amount here) to make a workable dough. Remove the dough from your cooking vessel and cover this dough and refrigerate it for 5 - 7 days (this is imperative to soften the seeds and infuse the dough with spice flavors). After this curing time, roll dough on a well-floured surface and cut in shapes with cookie cutters. Place on parchment lined sheet pans and bake in a 350 degree oven (turning pans around halfway through baking time) for approximately 12 to 15 minutes. Cool completely. (Note: when baking, be sure that your cookie cutter shapes on the pan are all of an equal shape and size, i.e., no big gingerbreadmen and tiny trees baking on the same sheet). We love to use piped, colored buttercream frostings on these cookies.
These cookies will keep quite well in a sealed tin. Keep at least five feet off the floor from corgis.

I am thrilled that you made and like our Swedish Anise Cookies! I have written out the Almond Macaroon recipe given to me by Marcel Walters, CEPC (Certified Executive Pastry Chef) during my apprenticeship at Colonial Williamsburg. Unfortunately, we'll have to find another use for your coconut! Anyway, almond paste (not marzipan) is somewhat pricey but this cookie is simple and sublime!
Chef Marcel's Almond Macaroons
1 pound almond paste (not marzipan)
1 pound sifted granulated sugar
4 to 5 ounces clean egg whites (from real eggs only)
1 to 2 drops pure almond paste (optional and nice)
Good, sturdy piping bag with large star or straight tip
Parchment paper (a must)
additional clean granulated sugar
2 clean kitchen towels, dampened with cold water
In an absolutely clean cuisinart or mixer, pulse or mix your almond paste and sifted granulated sugar until it resembles cornmeal. Slowly add the lowest recommended amount of egg white and use more if necessary. You have to strike a balance in this mixture - not too stiff, never runny. Add almond extract if desired.
Pipe cookies onto parchment lined sheet pan. Briefly "cover" the tops of these cookies with dampened towel and then scatter with some granulated sugar. Bake, until only golden, in a 325 degree oven. I begin to peep at 12 to 14 minutes. Leave on pan until cool or bottoms will come out if removed from sheetpan while hot.
These are a true European delight. I make them every Christmas too!

Ah! The cookie frenzy is reaching a creshendo now with the folding of white bakery boxes, coloring and squeezing buttercream frosting, tying bows and delivering to neighbors. At the real job, we celebrated the residents' Christmas Formal this week, two special menus coming up next week and one can only take it a day at a time! They are talking about snow here in Virginia tonight and tomorrow. Oh, we are keeping our paws crossed!!!!!!
Hey there, yes we got lots of snow! It did rain a little bit late Christmas day but other than that we have a ton of snow. But it's ok, the dogs love tunneling through it, haha!

Hey Melissa: Happy New Year from the state of Virginia....Merry and Sammie send their greetings to your family also....We have survived the holidays and are off to a good start in 2010. We have been snuggling up here because it has been very cold for our area...I really don't think the dogs mind it at all, I am the softie, but they do love snuggling....My yard looked like a picture postcard yesterday. It was just full of Cardinals, Blue Jays, and a red headed woodpecker....they were so busy eating the berries and nuts that had fallen off the trees....I doubt I will see that again any time soon. Just did not have the heart to let Sammie and Merry go out and disturb them....although they would have loved it....the chase would have been on for real. Anytime I turn them out in the yard they are scouting for birds, squirrels, rabbits and anything else that might be fun to herd. Expecting a light dusting of snow tonight....not enough for the dogs to play in....but maybe good for a winter nights walk. Marion
I don't know a whole lot about Corgis, but she's pretty red. I will upload a nice color pic that shows her coloring a bit better so you can help me figure it out.
My daughter lives in a town near mine. It's about a half-hour drive West, towards the mountains. She and her husband have another dog that is a Newfoundland. He is huge! As I recall, he weighs around 145 pounds! He taught Gus how to drink out of the toilet. He can do anything because no one can stop him!
My Sadie doesn't do that, even though Gus tried to teach her when she slept over once. I close my toilet lid and leave the bathroom door shut so she doesn't get any ideas!

Oh, we have a few Corgis now. My husband is the one that got me started. We have been breeding Corgis now for about 5 years. Love it! And having a husband as a Veterinarian sure does have its advantages!

I could knit Roger an entire new closet full of clothes if we could use the Corgi hair on our floors. I did get Roger the greatest pastel original of two Corgis (Tri and Red/white, of course) last year for fathers day. If I can take a decent picture I will send you a picture it is sooooo good.

We have said the tri is smiling and dreaming about what new wild adventure he can start when he wakes up. I said it was a pastel but it is a watercolor. If I remember the artist was in Canada. I got it on ebay. Just type in Pembroke Welsh Corgi and the categorie Art. There are some nice things. I haven't seen this artist since I bought the picture.
Robins - really? I vote for an early spring, that would be nice. Sounds like yucky weather coming again for the next couple of days though, boo! It is on again, off again with Leo but like I said it will probably be like that for the rest of his life. We can live with this - I just hope it never gets worse. He's such a cutie - he melts my heart when I know he's in pain. They love this warm weather too. They like to just go outside and wonder around the yard. Sometimes it's like I have a revolving front door.

We got new crate pads and goodies.....and some great toys....You should have seen the snow that was piled up from the last snowstorm...and to think at our home just 75 miles away we have none. Our Mom sends greetings to the humans at your home....LOL
