I believe there's an AKC sponsored website that evaluates dogs according to their trustworthiness with children. Of course, in every breed there's a standard deviation, but if you're specifically looking for a dog that is good with children, google around. I've never had a Corgi that was not trustworthy with my kids, but some were not great w/ other people's kids. Lucy hates children and babies. Rafa is a gentle nana-like dog w/ babies and children. Rafa is a rescue. Lucy is beautifully bred. Go figure! You mentioned your kids are shy with dogs. Maybe you could let them spend time with your friends' dogs and get used to dogs before bringing a dog in as a F/T pet. Study the breeds and their rating w/ small children.
So much depends on the temperament of the 7 yr. old Corgi & previous experiences with children and also your children and how they behave with a pet. It's hard to imagine your children being timid with a corgi pup as they are irresistibly cute. But, my youngest was so awful with our puppies that I wouldn't allow her near them unless I was in the room. Did you have time to check on the link I sent? Reputable rescue groups spend time with their rescues and know the type of home situation needed.
The first place I would look is through the PWCCA (Pembroke Welsh Corgi Club of America). Not every state has it's own club. But if you go to the website they can let you know if there is a TN chapter and also let you know if any breeders in your area have puppies now or expect puppies in the near future. I'm not sure when you want to get a Corgi or whether you want a young puppy or an older rescue. They would have that information, too. I had two puppies from Judy Hart, Sua Mah Corgis (now in TN, previously in N. CA). I think these days that she only has one litter a year. Hope this helps.
Welcome to mycorgi! If you are serious about owning a Corgi, you have one of the best Corgi breeders near you in TN. Do the homework. I've had 2 amazing Corgis from this breeder when she was in CA.
