I haven't been perfect with trimming his claws.

They're long, but I also notice the quick reached to the very end as well, giving pretty much no room to trim.

How do I remedy this?

I believe the more often you trim the nails the shorter the quick will get. I try to trim my guy's every week. You could also try the dremel which will only shave off a small amount at a time.
If you get a pedipaws or a dremel, you can shorten the quick by sanding through some of it.  There will be a drop of blood, and you should limit your dog's time on pavement for the next one or two days.  The quick will draw back into the claw after enough repetitions of this, and your dogs nails can be cut shorter.
When I let mine go and the quick gets long, what I do is dremmel it back just a tiny bit.  Then I wait a week and it seems the quick draws back a bit.  I then start taking it back to the quick once a week and after a few weeks of this, the quick is shorter.
