My wife and I have decided to crate our little Zoe during the day when we are at work. Right now, we don't leave any food or water with her in her crate, just toys mainly to keep her occupied. I've read in numerous places that puppies should have fresh water available at all times. Should we put water in her crate with her or is it safe with her to go without most of the day? Anyone have any experience on this? Thanks!!!

I have also seen the bowls that attach to the sides of the crate. A young pup must have water! They can dehydrate too fast. As for food I might wait and feed right away when you get home. The ice cubes are a great idea and you don't need to leave her a gallon of water but a cup or 2 so that she can rehydrate herself!
I always crate for at least the first year. A space like an exercise pen or a puppy proof room would be better if you will be gone more than 4/5 hours. Then I would leave water and plan on potty training taking a little longer but it is way better than a dehydrated puppy. When they are very young they can go down hill very fast! When you can not watch her she should be confined (crate or safe space) so she does not develop bad habits. You can put a little of her breakfast in a kong so she will have something fun to do while she is alone. Good luck with your new pup!
