I still have to work on the soup! It was ok but it could have been better even though my husband ate 3 bowls...he's not as fussy as I am...I made it in the crock pot and then put it in a kettle to thicken! I also found out that I'll have to make my own croutons out of rye bread to float on top!

We have a St Patricks Day parade in our community every year and all the corgi's march in it. The boys wears green bandanas. Chepstow marches with Roger and I drive Tenby in the decorated golf cart. (Tenby can't walk that far, plus the crowds scare him)

I thought I'd start St. Patricks Day early so....I'm making reuben soup tommorow!

Did you know the legend of Mermaids(Merrows) is an Irish folktale? I thought only Leprechauns originated from Ireland. I still think Corgis and Leprechauns must have had some kind of association. They are just too similar in their demeanor to not have...little tricksters!!!!!!

You make the sandwiches just as usual but then after you butter both sides of the bread you put them on a cookie sheet,(I think I bake mine at 375) set timer for 10 min., carefully flip and bake about another 8 min. What I like is they get crispy without burning and you can do 6-8 at once instead of 3-4 in a pan!

Have you ever made your reubens in the oven? They come out perfect everytime and it's much easier!

Reubens are the best!!! Wash it all down with a Guinness or a green beer, yum!!
